"Every ethnic group make some kind of potato pancake and each makes them differently. If you are looking for a Jewish latke this is not the recipe for you. This is the same recipe that my German great grandmother made. I was taught to put the grated potato in a linen dish towel, pull up the edges and twist the towel as tight as possible. You will be amazed how much liquid comes out of the potatoes. We would eat our pancakes topped with canned peaches, canned pears, or applesauce. Potato pancakes were the whole meal.
