With just one sweet potato and one parsnip, I still had enough veggies to make two tarts with this recipe. I made one on Christmas Eve and cut in half and brought to two friends houses. That was a "dry run" for the Christmas day tart, which came out even better. I added a bit of butter to the pasry sheets. Made this with maple syrup and balsamic"
