This is a great recipe concept. I think it's one of those that you can use as a base and experiment with variations. In my case, a neighbor bequeathed us a bunch of Asian persimmons (sweeter) and I found this recipe. My main substitute was pomegranate wine subbing for red wine. Lacking phyllo dough on hand, I used a fresh lavash flatbread that was seasoned with rosemary and other herbsthat I did happen to have.
