"This is a good dish - very quick and easy. I have a similar recipe (I think is better). It's called La Bamba Casserole, and you can get it on epicurious. It's the same meat layer but with a layer of refried beans and green chiles. I do like how Rachael's recipe has a crisp layer of spinach tortilla just under the melted cheese topping. That would be a good addition to the La Bamba dish. Either recipe is a great, easy, flavorful Mexican casserole dish everyone needs to have in their collection.
