"Delicious! My husband, who hates tomatoes & my picky 4 yr old loved them! Easy to make and flavorful. I used Italian seasoned panko crumbs and didn't make the sauce. This will be a new staple for us. Thank you! "
Reviewed Trenette with Eggplant and Basil Pesto
"I used Rotini pasta instead and it worked great. the sauce held on to it very well. It took me about 40 minutes start to finish. This will be a new staple at our house. Thank you, Giada! In addition to the eggplant , I add grated zuchini (1) and pancetta. (I cooked the pancetta first and then cooked the eggplant & zuchini in the pan with the pancetta flavor). good stuff!"
