Joseph, try coating a big metal spoon with cooking spray and let your daughter stir it fast and a lot... she'll have to use her muscles!! Dig down deep and get the goo at the bottom, it will cover it all nicely, don't give up! Then, get on disposable glove, spray them with cooking spray and go into form balls with only the tips of your fingers,portion...

This is a great recipe, BUT! 225 degrees is not hard crack, cook until 250-260 for best results. I also added 1/4 cup butter and substituted out half the corn syrup for molasses. It came out with a more robust flavor and caramel color that is truly lovely.

Fantastic!! First I made it as was called for but I added more of the sweet chili sauce, I liked it more saucy. Now, I usually add in sliced red bell peppers and if I don't have green onions, sliced white or yellow onion works as well. I also have added snap peas instead of the snow peas and I think I like that best...green bell pepper also worked"
