Pretty good. I used a brush to apply the sauce since it wasn't quite the consistency I'd expected. "

Reviewed Curried White Bean Dip

5 star dip, but the pita chips are awful. I use about 1/2 to 2/3 tsp kosher salt and that seems to be the perfect amount. Made this about 12 times now so have it pretty perfected. Used garbanzo once by mistake and still tasted delicious. "

Reviewed Fire Island Burst Tomato Pasta with Lemon Herbed Goat Cheese Balls

Sep 19, 2013 in Food Network Community Toolbox on FoodNetwork.com

I love all things goat cheese but hate fresh tomatoes (but know they're good for me); yet somehow I liked the burst tomatoes and thought the goat cheese was unnecessary. Especially with the parmesan in the dish, I didn't like the goat cheese element. Will make again for sure with just herbs, parm, the zest, tomatoes and garlic. "

Basic recipe gets you there, but I will return to my old method of mixing the cheese in with the potato mash, then re baking, rather than topping with cheese. "

Reviewed Gina's Hot and Spicy Tortilla Soup

May 25, 2011 in Food Network Community Toolbox on FoodNetwork.com

I make this soup all the time and it has a good level of heat, though I sometimes swap 2 serrano peppers if I want it extra spicy. I also use shredded rotisserie chicken, ro-tel tomatoes (more heat!), and green giant's small canned "mexicorn". I only wish the color came out a bit more red, but the flavor makes it wo"

kale gets a little too wilted for me and there's too high a parmesan to veggie ratio. "

Reviewed Turkey Cutlets with Cranberry Orange Stuffing and Pan Gravy

May 25, 2011 in Food Network Community Toolbox on FoodNetwork.com

The 2 stars are for the cutlets and gravy, which I did enjoy and will make again. I wanted so much to like this, but the cranberry orange stuffing is just a bad idea. I used a fat free cran-orange mix b/c no muffins at the store, but it made for insanely sweet stuffing that had a wet gumminess that no reduction of liquid could have fixed. I even t"

Reviewed Banana Bread

May 15, 2011 in Food Network Community Toolbox on FoodNetwork.com

I use a whole stick of butter instead of shortening, plus add chocolate chips, and vanilla extract. I usually use walnuts because who has macadamias lying around their pantry? Also, I would estimate I use at least 1 cup of banana, sometimes a little more...it makes for the slightest hint of gooeyness towards the center of the loaf, without anythin"

I cut dressing down to just shy of 1 tsp kosher salt and 2 tblsp lime juice, but still found it salty and tangy. Funny, I could have increased the wasabi powder with no problem though! We s"

Reviewed Pappardelle with Ricotta: Pappardelle con Ricotta

Feb 15, 2011 in Food Network Community Toolbox on FoodNetwork.com

meh...I'm eating it because I'm starving. Perhaps some sundried tomatoes would give it some bite; the peppery arugula sort of gets lost in the herb salad, requiring much seasoning with salt and pepper. I wouldn't bother with this one.
