"This is a simple and delicious recipe. Roasting the vegetables adds a lot to this dish. The prep work on these can be done the day before if needed, and it becomes easy to finish once that is done.
I used about two tablespoons of olive oil tossed with the pasta instead of the cooking liquid reserve. Also, I used thin spaghetti instead of bow-tie pasta.
