I'm so grateful to all the other posters...thank you for your insights into this dish as I followed several of them. Here's what I did --and it turned out fabulous. This cake was absolutely perfect--by far, the best carrot cake I have ever had. I followed the recipe and added one thing: I put a layer of fresh diced pineapple on top of the frosting layer between the two cakes.
