I am not sure why people said the sauce didn't thicken. The key to the sauce is to cook down the wine until it is almost completely evaporated and cook it low and slow for 2 1/2 hours. We have a big cookout every year and I always try to find something new. It took a while to before I finally pulled the trigger and I made the sandwich and was so glad I did. It got rave reviews when I unveiled it to friends and family. I had to used cherry tomatoes instead of Calabrian chilies too they were too hard to find.
