Okay.....this is sooo delicious, but if you have never had jerusalem artichokes before, its best to take it slow. I had explosive painful farts for hours and hours!!! These were very good. The cake was a little too dense though so next time I am making them with my regular vanilla cupcake recipe with coconut mixed in. I halved the frosting recipe and had enough to frost 22 cupcakes. The frosting is really the star, it would have gone from really good to amazing with a more delicate cake.
