So good! Yes, I agree, add more chicken and veggies. I didn't add dill and it was still tasty. I would also probably double the recipe because it is so good would be good to freeze and have some for another week. I love the fact that the rice mixture adds nice creaminess and texture. I might try to use a rotisserie chicken next time to save time, "

Really delicious!! Definitely a saver! My husband and I did not think the amount of chipotle peppers called for made the dish too spicy - it was just right for us, but definitely had a kick, so it might be too much for folks who do not like hot / spicy dishes. My lips are still tingling a bit from the hot peppers ;-)"

I love salty foods, but this meatloaf was a bit too salty, even for me. I think a half tsp would do, as the feta, in itself, is quite salty. The flavor, other than the salt, was nice, but it was a bit on the dry side, and would be better, as others said, with a gravy/sauce of some kind. I will probably try other meatloaf recipes in the future in...
