Reviewed Banana Bread with Pecans
"Made a 1/2 batch with 2 ripe bananas. Due to the comments about the dark color I baked it at 325 for 25 minutes for the muffins. Turned out beautiful! A rich golden brown. I was making it for my husband who liked it and said it was good enough I should make it again. Best part was how easy it was to make. If I make it again though I will skip the step of mashing the banana in a bowl and just throw it in the mixer after all the wet ingredients are together and let it get mixed into chunks. This was easy enough that I did it with my 1 1/2 year old daughter sitting on the counter "helping". My husband gave the flavor 4 out of 5 stars. He did say it might be better with a bit more cinnamon or nutmeg type spice to it, so I will experiment. All in all, I would recommend trying it. The prep is easy and the bread turned out moist, fluffy, and delicious!"

"My mother is vegetarian and my brothers girlfriend is vegan, so I am always excited to try a recipe they may enjoy. I followed it perfectly except that I couldn't find capers at my grocery store. Personally I thought the mint was a bit odd, so I will try basil next time, but my mother loved it. She took the rest home and said it did indeed get better the next day. I will make this again tomorrow for a family dinner as I need to please not only a vegetarian, and a vegan, but also my kosher uncle and cousin.
