Reviewed thai shrimp curry

The shredded carrots give this curry great texture. Flavors are fabulous. I've made a number of curries from the food network website that were mediocre to bad and needed a lot of doctoring. This was happily not the case with this recipe. Will make again and love that it's easy enough to make for a quick week night meal.

Really nice flavor, but as others have mentioned, the sauce needs to be doubled. I hadn't read the reviews the first time and made it as written and the stir fry was rather dry. I unfortunately, didn't have time to make more sauce. The extra sauce made a big difference the next time I made it!

I am really surprised by all of the 5 star reviews. This did not taste like curry. There was a faint hint of the red curry in the background, but the canned tomatoes overpowered the rest of the recipe. It is seriously lacking in a lot of flavor, which I have never said about a curry before this. I will definitely not make this one again. It's a shame...

Delicious! I made the recipe as written with a rack of lamb (minus the sumac) and it was extraordinarily wonderful! I paired it with an herb salad and grilled apricots and it was quite a hit for our dinner party. Will definitely make again and easy enough for a mid-week meal.

Super tasty, relatively easy, I"ll make it again. It was a little spicy for my son, so next time I'll probably omit the red pepper flakes and maybe sub another kind of sausage. The adults loved it. One thing to keep in mind is that the formatting of the recipe does not differentiate the essence recipe from the rest. I almost dumped in 2 tbsp paprika...

Delicious! If you like heat, this is a great recipe. If you're not much of a super spicy fan, I'd cut back to 1 jalapeno. The mango salsa is a must. We will definitely make this again! Next time, we'll try cooking the shrimp on the bbq and then adding back the sauce. "
