These have become part of my holiday repertoire. I love how versatile they are. I like using Seville orange marmalade and that you can make the filling a let it sit for several days. They are one of my top two favorite cookies. Thank you Emeril."

I made this for Thanksgiving this year and it was the highlight. No need to change a thing though I might add a touch more cayenne. Make sure you slice the potatoes to 1/8. I used yams with great results. It's a rich dish and blends well with Thanksgiving flavors. "

Reviewed Smoked Salmon Spread

Based on the comments, I used double the amount of salmon. Used with a smoke flavored cracker which is a nice combination. Would make it again. Appreciate the reviews, they're very helpful to read before diving in. This recipe is easy, quick and delicious."

As written we are eating the equivalrnt of a stick of butter & shortening in each portion. I split this to six portions. Delicious or not, I will probably rarely make this. That is over the top! It reminds me of the commercial where someone is straight out eating a stick of butter."
