Reviewed Coconut Cake

I loved this cake. I thought the almond extract worked great with the coconut. I did add a 1/4 tsp of coconut extract for extra flavor. I don't know what people are talking about when they said it came out dry. Did you use extra large eggs like a lot of her recipes call for? Did you line with parchment? The edges may have overcooked with her bakin"

So good. They are hard to keep from eating until dinner. I cooked mine on an electric griddle sprayed with canola oil and cooked about 2 min on each side (like tortillas)and they came out wonderfully."
