Reviewed Penne-Wise Pumpkin Pasta
"Delicious, fast, healthy, and simple! Next time, I will probably add some kale or broccoli for extra greens. We really enjoyed this quick meal. At this time of year, nothing is more comforting than pureed pumpkin or butternut squash. I should also mention that we subbed soy milk for cream and water for chicken stock. Parmesaen and fresh grated pepper made it absolutely divine for fall! Thanks, Rachael!
Reviewed Shrimp Boil
"Absolutely delicious! This recipe creates a very colorful presentation when served on a large platter. I used some of the broth to steam broccoli as a side dish. We truly enjoyed this combination of American flavors...and we added pineapple hot sauce to the buttery broth for a little bit of a kick. I am not a huge potato fan, so next time I will probably not use the baby potatoes. What a fabulous meal, though, for a shrimp and corn lover like me! Thanks, Food Network!
About Me
I am a middle school teacher in the Boston Public Schools. I teach bilingual special education. I love languages, cooking, running, and working out. My favorite foods are shrimp, any kind of vegetable (esp. pumpkin and broccoli), red wine, and pasta. I also love HOT foods...the SPICIER the BETTER! Bring it on! I really enjoy cooking, and I learned how to cook as an adult (ever since my boyfriend...now husband...brought home a copy of Joy of Cooking!). I did not really cook growing up, but I ate lots of fresh vegetables from my grandfather's garden.
