Reviewed Rustic Vegetable and Polenta Soup
"Very flavorful, filling, healthy and yummy!! I tasted it with and without butter..next time I'm going to go without it! I did not have polenta handy so made some parmesan croutons to top the soup off. It gave it the hearty-ness to make it a dinner soup.

"So..maybe I should have read the reviews before making this. Because the recipe didn't specify how to use the butter, I went ahead and melted it so it could be "poured" on. My casserole came out a little too mushy, very flavorful the texture is too soft for me! I'm thinking of adding some more bread and baking again?!
