My Activity

Reviewed Plum Tart

"One of my hubby's favorites desserts! I used plums that weren't too ripe so that I could cut them. And to make it less dry, I served it warm with some vanilla ice cream on top. I switched it up with peach couple of times (I boiled them for about a minute in boiling water, then peeled the skin off), and the taste was richer than the plums, but it was still pretty good. I also used the store bought graham cracker crust instead, but with the same amount of ingredients, spread the mixture over the fruits. I've made it this same way about 10 times now and it's always been a hit with our families.

Reviewed Tequila Lime Chicken

"Good recipe, but it's not 5 stars. The chicken came out a little bland. So the 2nd time I cooked it I marinated it with some salt, pepper, dry red hot chili peppers, and less orange juice. I didn't have a BBQ grill so I seared it on the grilling pan over the stove halfway first, then put it in a casserole dish for about 400 degrees until it's cooked all the way through, and my hubby loved it. I'd make it again but I'm going to try using Thai chilies.

Reviewed Poached Salmon with Lemon Mint Tzatziki

"Delicious! I took the advice from other reviews by marinating the salmon with a little bit of salt and adding some peppercorns to the liquid, and it came out so wonderfully! Although the sauce is meant for the summer, it's also a good dish to serve during Thanksgiving, which was exactly what I did this year because my husband's family isn't really into the whole American Thanksgiving feast. Be sure to cook the salmon ACCORDING to the time indicated in the recipe, or else it'd be overcooked.

Reviewed Portobello Lasagna Rollups

"Wonderful dish! I used cremini mushrooms instead of portobello because of the difference in price and added frozen (thawed with juice squeezed out cauliflower, broccoli, and green peas. I had extra filling so I put it between the roll-ups and cheese. It was a hit with my family, who are extremely picky eaters because they think Chinese food is the only good food out there. If you're not going to serve it right away, make sure to cover it with aluminum foil and then reheat it in the oven, or else it'll be dry. Thanks, Ellie!
