Reviewed Gingerbread Cookies 101
"I read the other reviews and thought (with no humility whatsoever) that I'm an experienced cook and everyone else didn't know what they were doing with the dough. I was wrong. Refrigerated 24 hours, liberally floured, cold kitchen, marble cutting board... and this was impossible to work with. I eventually broke down and rolled the dough directly onto parchment paper and still had trouble. While the taste truly is delicious, it's not worth the effort. I gave up halfway through my test batch in search of another recipe.
Reviewed Beatty's Chocolate Cake
"This is my go-to chocolate cake recipe. I've made it in the round, in cupcakes, and in a giant sheet cake. I'm not a buttercream person (I've never met a cream cheese frosting I didn't like), so I never tried the frosting - but the cake itself is a big winner in my book.
Reviewed Good Old Country Stuffing
"Been making this for years, and it's always a hit. Make sure you have a *very* large bowl, this won't fit int a standard mixing bowl until the stock gets absorbed. The recipe doesn't specify, you'll need a 13x9 baking dish for this recipe. I've also made a vegetarian version using veggie "sausage" and veggie broth and it's still delicious. I've thought about adding in some diced gruyere, maybe next time.
Reviewed Easy Cheese Danish
"Delicious! My friends gobbled them up. Try throwing some fresh blueberries in before folding them up for an added treat.
Reviewed Spinach Gratin
"Fantastic! I added four cloves of minced garlic, doubled the parm, and dumped handfuls of gruyere on top. I made it a day in advance, and it turned out beautifully.
Reviewed Creamy Baked Pumpkin Risotto
"This recipe has a lot of promise, when tweaked. First off, forget the baking idea. If you want to make risotto simple use a pressure cooker. Add a little olive oil to the base of the pot over high heat and slightly toast the rice (30 seconds). Then throw in the base ingredients, clamp the top, and wait. Once the valve starts rocking wait nine minutes and then cool immediately under running water. Then throw in the rest of the ingredients. I doubled the cheese. Made this for Thanksgiving and was asked for the recipe by several guests. Next time I plan on making it, I'm going to try sage instead of basil to see how that affects the flavor.
