This is a wonderfully hearty but not heavy soup which is adaptable, as others have said. Got spinach? Use that. Kale. It works. Quick and nutritious! I used diced rotisserie chicken instead of ground chicken. The burrito lovers threw theirs into tortillas and the salad lovers piled theirs into bowls, and everyone was happy. Do not underestimate the delicious addition of the peppers, jalapenos, and onions, esp. when topped by the dressing. Can't wait to make this again. ""

Very tasty! Played with the jalapenos to bring some serious heat. Sauteed some eggplant and zucchini in a little oil, and added green beans and diced chicken breasts for a wonderful meal. Thanks!
