OK. You can't sub ground ginger for fresh; lower moisture, different flavor. You can't marinate chicken for two days; texture goes off. Garlic loses potency over that time, so the garlic flavors would be muted, exactly what you experienced. Roasting at 450 for 45 minutes isn't the same as grilling over direct heat for 5-6 minutes per side; very different...
