Made this for a dinner party for 14 people and it was a huge hit. We did not go bottle for bottle wine to sparkling water... we used 4 bottle of wine and 3 bottles of water. We should have made more. I might try the ginger ale next time, but it was great as written.

Reviewed Rabbit Ragu with Pappardelle Pasta

I love Rabbit, my Mother and Grandmother made it fairly often when I was a Child. This dish was amazing. It was somewhat time consuming, but not complicated. I highly recommend shredding the Rabbit as he suggests, it adds to the prep time, but its worth it. I plan on making it again during the holidays for my entire family.

I made this on a weeknight. Very quick and easy and it's as good as any Franchese I ever ate at an Itlaian Resturant. I did simmer it a little longer than he said (maybe 10 minutes or so instead of 2 or 3), the Chicken was so tender I cut it with a fork. I highly recommend it.
