1) I halved the cheese to 4oz, otherwise you get 60% of your daily saturated fat in one bowl (I also added it after blending).
2) I too didn't like the consistency as much - will add another potato next time and let simmer longer.

"Absolutely amazing! Used coffee liquer (Blue Mountain, from Jamaica) but followed this otherwise. Very easy to make and some powdered sugar on top instead of ganache is divine. It was snarfed up at work quickly and my gluten-free friends were swooning. Will try next time with coconut rum and shredded coconut on top! "

"I skipped the shallot since I'm an onion hater, but I truly love this recipe! I use plain Greek yogurt instead of sour cream to further reduce fat. I halve this recipe often and broil in individual meatloaf pans - really cute and portion controlled! "
