"i also could not find the kaffir leaves, so i used a bay leaf, ans extra lime zest as per a substitute suggestion. super easy to make! it did take a while to get the right consistancy on the sauce,about 45 min on med heat, so i would suggest getting the sauce going first, you will have plenty of time for the rice.
now i have picky eaters here, one doesnt like sweet, one hates coconut, and the other will not touch seafood. my fish hater wouldnt eat, but the other two did, and loved it.
there is very little salt in this recipe, that makes me happy. ant it was not spicey at all, so i added a little thai spice blend to give it a little heat. if i could find super low salt recipes like this, i would eat them every day. my doctor would love me!! LOL
so make this, and enjoy it!!!

"FOR ALL OF YOU WHO ARE ASKING FOR TIME ADJUSTMENTS FOR LARGER BIRDS.......
i figured about 12 minutes per lb.........20 pounds 3 - 3 1/2 hours. and some one else said their bird was done in 3. so this should help you out.
WHO WANTS GRAVY??......i fried a bird a few years back, and i believe it was altond gravy i made, it had smoked turkey wings and cognac......done know what the name of the recipe was, but it was AWESOME!!!!!

"first time making altons turkey. very pleased so far. i have a 20lb bird, so i figure it should cook for about 3 or 3 1/2 hours. thats the only thing that worries me. well, that and i read that some people considered the pan drippings useless due to salt. if anyone has some advice for me on these things, please comment! thanks and happy turkey day everyone!!
