LOVE this easy recipe !!! I'm italian and all my family always say how hard and time consuming it is to make aranini, so when i saw this recipe, i knew i had to try was so easy. i made the risotte earlier in the day and kept it in the fridge. i think starting with cold risotto made it easier to mold into a ball. i used mozzerella instead...

this is the perfect quick soup to make on a cold winter afternoon...its hearty and makes the house smell so good !! i didn't have any cumin, coriander, parmesean rind or celery and it still came out great. i only used about 2 cups of frozen broccoli since i didn't have any of the other veggies. Thanks Giada for another recipe that's molto buono !
