Outstanding recipe! I used boneless bottom round of beef - there was no waste and the flavor was excellent. I followed the recipe exactly except for the tablespoon of salt on the veggies, I reduced it to 1 teaspoon. Otherwise, it was Ina's recipe, and the best bourguignon I've ever had.
