These were unlike enchiladas I usually make, and they were delicious! I used Herdez Salsa Verde instead of making tomatillo salsa, and I used roasted Hatch chiles. Also cubed a couple chicken breasts and sauted them with Mexican oregano, because I didn't have cilantro. Also put Mozzarella on top and cojack inside the enchilada. I can see where"

I made this to serve over bread pudding and it was FABULOUS! Of course there was a lot left over and the older it got the more it tasted like butterscotch. Used the rest over ice cream. I will never use store bought butterscotch sauce again!!!"

These tasted great, but maybe I made the pattys too thick because when they were done they were a little dry. The second time I browned the broken up seasoned meat and added it to a fritatta. DELICIOUS!"

This was awesome! I sprinkled Italian seasoning on the chicken breast and grilled in a grill pan. I only used 1 cup of spinach but it wilted down so much I will use 2 cups called for next time. I also used Asiago instead of Parmesan. My husband and I snarfed the whole thing down in one sitting, not proud of that, but it was THAT GOOD!!!!"

These have the potential of being good, but they turned brown really fast and at 18 minutes they looked done but the middle wasn't. They were in for 25 and got too dark and brittle around the edges. I used much less sea salt on top. I only had one pkg. of chips so didn't use 3 cups. I will try again, but think I will reduce the heat to 350."

Instead of quesadillas I made fajitas with the steak, carmelized onions & yellow and red bell peppers, the mozz cheese and the tomatillo salsa with cilantro sprinked on top. It was DELICIOUS! I made this after watching Alex's show this morning, but reading the recipe now, I see I forgot to add milk to the Bolobnese sauce. Didn't matter, it was still excellent! Also, I didn't make the tomato sauce, but just layered the Bolognese in the lasagna. Have never used carrots in sauce before, a nice touch. Can't wait to eat it again tomorro...

I was skeptical because of the consistency of the batter, very thick and oily looking, it didn't seem like it could have any sort of crumb. However, it did turn out like a cake and it is delicious! It is a keeper and I will definitely make it again!
