"These came out deliciously, but they were missing something...I substituted cheddar cheese for the pepper jack and that helped give them a robustness, but maybe there should have been a higher cheddar to cream cheese ratio? Reviewed Basic Sourdough Bread

"I usually love everything that Emeril makes, but this bread was a loser. I used my own starter, and needed to add a lot of extra water. Still, the dough didn't rise adequately even after letting it sit overnight. The finished product was more like a dense scone with a very tough crust."

"I used yellow split peas and substituted turmeric for the saffron powder since it is very expensive to buy saffron. The results were delicious, and I'm sure it would be great with the saffron as well. ""

Reviewed Rigatoni with Creamy Mushroom Sauce

"This dish was good, but it's not really that great as leftovers the next day. I agree with the reviewer who suggested using on 3/4 a pound of pasta because I used 1 pound and it was a bit too dry (and using the reserved pasta water only thinned out the sauce.) The chives were absolutely necessary, don't skip them!
