Reviewed Loads-of-Blueberries Coffee Cake

"This coffee cake is a staple at our house during blueberry season. It uses up a lot a berries, is easy and fast to make, and has a great, not-too-sweet taste. For us, the nutmeg on top makes it special (I use fresh nutmeg). I usually use white whole wheat flour and it turns out perfectly."

Reviewed Blueberry Coffee Cake

"This coffee cake was very good, although you can certainly tell that it is a healthful product--there's nothing wrong with that, but I wouldn't pass it off as a traditional coffee cake. It is just barely sweet enough--if you like your sweets sweet, bump up the brown sugar by a 1/4 cup. Also, the batter is Super sticky and hard to spread, so when y"

Reviewed Veggie Cheese Enchiladas

"I liked these, but I will be making a few tweaks. The quartered mushrooms turned my family off--a bit big and chewy. We agreed that pinto beans would be a good alternative. I also added spinach, which was a good addition. I find most bottled tomatillo salsas to be very salty (not to mention expensive), so I used half tomatillo and half fire-roaste"

Reviewed Basic Waffle

"These live up to their name - a basic waffle. They work well in non-Belgian style waffle makers, and have very good flavor and texture. You could jazz them up with nuts or bananas, but they are very good as-is. I agree that the buttermilk should not be substituted!"

Reviewed Harvest Moon Macaroni

"This was pretty good but doesn't have a lot of flavor (like many mac and cheese recipes!). I microwaved my cubed butternut squash and after I added it to the pot I mashed it up a bit with my spoon. I liked having some chunks of it in there for texture. Next time I would add more squash, as much as 20 oz., and I would add more hot sauce. You defini"

Reviewed Lentil Quinoa Salad

"This salad was a good idea but the flavor was lackluster. I would definitely add salt to the water cooking the quinoa, and I would use lime juice instead of red wine vinegar. As long as you've got the limes, you might as well use the juice, and I think it would give the salad more punch, which is needs. Definitely worth while to double the recipe."

Reviewed Ultimate Veggie Chili

"This was tasty and very healthful. I liked using tofu instead of TVP, and freezing it makes the texture great. It would have been way too spicy for my family had I added all the heat in the recipe--I just used the chili powder and skipped the chiles. I also left out the nuts and didn't miss them. My kids didn't like the "smoky" flavor of the chipo"
