Reviewed Tuna and Hummus Sandwiches

May 31, 2013 in Food Network Community Toolbox on FoodNetwork.com

I am a big Ina fan, but this is by far my least favorite of her recipes. I found both the tuna and the hummus very sharp. The cornichons and lemon overpowered the tuna and the garlic overpowered hummus so all we tasted was just one big, sour bite on bread. I could probably tweak the ingredient levels and try it again with better results, but I'm u"

Reviewed Shrimp Scampi with Linguini

I followed the recipe exactly and it turned out great. It tasted like something you'd get at an Italian restaurant. I was frightened to add so much salt to the pasta water, but it was a revelation how much that helped to boost the flavor. I would make this all the time if shrimp wasn't such a pain to peel!"

Reviewed Loads-of-Blueberries Coffee Cake

Feb 20, 2013 in Food Network Community Toolbox on FoodNetwork.com

This coffee cake is a staple at our house during blueberry season. It uses up a lot a berries, is easy and fast to make, and has a great, not-too-sweet taste. For us, the nutmeg on top makes it special (I use fresh nutmeg). I usually use white whole wheat flour and it turns out perfectly."

This coffee cake was very good, although you can certainly tell that it is a healthful product--there's nothing wrong with that, but I wouldn't pass it off as a traditional coffee cake. It is just barely sweet enough--if you like your sweets sweet, bump up the brown sugar by a 1/4 cup. Also, the batter is Super sticky and hard to spread, so when y"

Reviewed Veggie Cheese Enchiladas

Feb 18, 2013 in Food Network Community Toolbox on FoodNetwork.com

I liked these, but I will be making a few tweaks. The quartered mushrooms turned my family off--a bit big and chewy. We agreed that pinto beans would be a good alternative. I also added spinach, which was a good addition. I find most bottled tomatillo salsas to be very salty (not to mention expensive), so I used half tomatillo and half fire-roaste"

Reviewed Basic Waffle

Feb 18, 2013 in Food Network Community Toolbox on FoodNetwork.com

These live up to their name - a basic waffle. They work well in non-Belgian style waffle makers, and have very good flavor and texture. You could jazz them up with nuts or bananas, but they are very good as-is. I agree that the buttermilk should not be substituted!"

Reviewed Harvest Moon Macaroni

Feb 12, 2013 in Food Network Community Toolbox on FoodNetwork.com

This was pretty good but doesn't have a lot of flavor (like many mac and cheese recipes!). I microwaved my cubed butternut squash and after I added it to the pot I mashed it up a bit with my spoon. I liked having some chunks of it in there for texture. Next time I would add more squash, as much as 20 oz., and I would add more hot sauce. You defini"

Reviewed Lentil Quinoa Salad

Feb 12, 2013 in Food Network Community Toolbox on FoodNetwork.com

This salad was a good idea but the flavor was lackluster. I would definitely add salt to the water cooking the quinoa, and I would use lime juice instead of red wine vinegar. As long as you've got the limes, you might as well use the juice, and I think it would give the salad more punch, which is needs. Definitely worth while to double the recipe."

Reviewed Ultimate Veggie Chili

Feb 12, 2013 in Food Network Community Toolbox on FoodNetwork.com

This was tasty and very healthful. I liked using tofu instead of TVP, and freezing it makes the texture great. It would have been way too spicy for my family had I added all the heat in the recipe--I just used the chili powder and skipped the chiles. I also left out the nuts and didn't miss them. My kids didn't like the "smoky" flavor of the chipo"

Reviewed Devil's Food Cupcakes with Chocolate Icing

Feb 10, 2013 in Food Network Community Toolbox on FoodNetwork.com

These cupcakes had good texture--fluffy and moist--but the flavor was lacking. The chocolate flavor didn't not come through well. perhaps adding a little coffee would have done it. For those tempted to sub regular whole wheat flour for the pastry flour--don't do it! The cupcakes will not come out light and fluffy, and that is the whole point of de"

Reviewed Winter Vegetable Soup

Feb 10, 2013 in Food Network Community Toolbox on FoodNetwork.com

This is a very good soup. I didn't knock my socks off, however, and I think I was expecting it to after all the hype. The soup does taste amazingly meaty, which may actually be a turnoff to vegetarians. My only complaint was that I thought the vinegar came through too much. I would have added just 1 Tbsp and then tasted from there. You could sub s"

Reviewed Chocolate Chip Cookies

Feb 4, 2013 in Food Network Community Toolbox on FoodNetwork.com

Love the simplicity of this recipe. It's great when you've got a craving and want fast results! I thought 12 oz. was Way too many chips. I ended up putting about 6 oz. of chips (half a bag) and adding nuts. I also reduced the granulated sugar by 1/4 cup with good results. Good recipe if you want fast and easy."

Reviewed Pecan Sandies

Sep 28, 2012 in Food Network Community Toolbox on FoodNetwork.com

These came out pretty dense and a bit dry, which I kind of expect with a "health' cookie. But it was easy to make, and the flavor was really nice--you can taste the almond butter behind the pecan flavor. It's worth doing if you are a pecan fan and want an easy fix. Definitely double the recipe! Who wants to go through all that for just 12 cookies?"
