Just made these and they are DELISH! I used canned pumpkin instead of fresh and still turned out great! The recipe makes about 16+ mini cakes and the icing needs to be doubled! Oh, and added a tsp of vanilla to the batter!

I've used several different recipes and so far this one takes the cake! Super delishhhhh! I substituted coconut oil for the regular oil and doubled the cinnamon & vanilla! I've made both bread and muffins, cooking the muffins 23min! Both turned out excellent :)

This cake was delicious!! I used 2, 9" cake pans and worked just fine and doubled the vanilla because the batter needed a bit more flavor. I'd also add another 1/2 stick of butter to the icing! Thanks Trsha for a great recipe... This is a keeper!"

This is a great and quick recipe!! I used a small whole chicken and added a bit more seasoning to the chicken and veggies! Cooked covered for an extra 10min to make sure pototoes were soft! Super delicious!! "

Great Recipe! Must cook for at least 1hr! Also, season the potatoes with some season salt or whatever you have! Also, add at least 1 full C of cheese to the sauce, makes it much better!!
