I made this last night to clean out some things out of my fridge, so I made the quiche but not the salad.

I used frozen pie crust instead of the pastry. To make the crust large enough to fit in the springform pan, I placed two pie crusts over each other and then rolled them out together to size. This worked perfectly.

Yum, Yum, Yum. It takes some practice to brown the fideos just right (do not go easy on the olive oil), but other than that, this is one of those dishes you can do "some of this, some of that". I've made it enough times that I just wing it. Do not, however, miss out on the freshly ground coriander, it makes it!"

I made some changes based on what I had on hand and it was excellent!!!! I used canned GWNbeans. I subbed hot Italian sausage for pancetta. I have had bad luck with bread in soups before so I left it out. Also, I don't like celery so I left that out, and subbed frozen spinach for kale. Yum! I don't know what it is about roasting veggies (broccoli, cauliflower, brussel sprouts) that makes them so fantastic, but it does. Great!
