"This is the BEST eggplant parmesan recipe! My friends and family enjoyed it very much. We liked it so much we had some for breakfast the next morning. It is a bit time consuming so it's better as a Sunday meal. Get your family involved when making it. To make it easier you can prep the sauce ahead of time and use store bought bread crumbs.
