Reviewed Jamie's Coconut Cake

"This cake is great. I have made it twice but substituted the sugar in the cake and filling with splenda because of diabetics in the family. I made the cake layers a day in advanced and brushed the coconut milk on each layer several times during the day and prior to assembly. I used sugar as directed in the 7 minute frosting because I was not sure if the frosting would turn out as well using a sugar substitute. The cake was extremely moist and very good. It was a big hit at my house.
