HUGE disappointment! There is no reason why these should be called pumpkin spice cranberry muffins. There are no where near enough cranberries to warrant that flavor being part of the recipe name. This is a great go-to recipe for me in the summer time. It goes well with regular or whole wheat linguine as well as pastas of different shapes. I always use fresh spinach instead of the arugula because I prefer it. And as a warning: it is very easy to over do it on the shallots or lemon because they have bold flavors. ""

Amazing recipe and the meal I get the most requests for. Every time I make it, I am reminded of when I lived in New Orleans. I always add more vegetables than the it calls for and I am used a can of diced tomatoes (drained) in the winter when I can't find good ripe ones or to help cut down on all the chopping.""

Very good recipe. I am not usually a fan of baked mac and cheese but this one is great!! IT wasn't the simplest mac and cheese to make, but I love the combination of the gruyere and tomatoes. This is an amazing recipe that reminded me of when I lived in Louisianan. I have made this a few times; I use more veggies than Emeril, and sometimes more shrimp. There is a lot of chopping involved but very easy once the prep is done. I also used pre-made Emeril's cajun seasoning, found it in the grocery store. This is a keeper for us! "
