Had this steak many years ago at Emeril's Fish House in Las Vegas. Have been making it ever since for special occasions. One of my son's favorite recipes, ever! Good flavor without being too spicy for the spice wimps (me. The essence and the remoulade are a fine addition to the steak. A winner in my book!"

Very good soup! Tastes like Chili's. I didn't have masa, so I boiled two cups of water and diced up 6 corn tortillas and let them soak, then pureed them in my food processor before adding to the soup. I simmered the broth, enchilada sauce etc for 35 minutes without the Velveeta. I only used 8 oz of Velveeta and added a squeeze of lime. Adjust...

Added my own "secret" ingredient...a tablespoon of bacon fat! Cooked them the White Castle Slider method...poked 4 small holes in the middle (they close up) and steamed by placing over caramelized diced onion, covered pan for 3 minutes. Tender, juicy and very flavorful!"
