Reviewed Wilted Spinach Salad with Balsamic-Honey Vinaigrette

I used this recipe for a practical exam in culinary school and got high marks. It's even more delicious than it sounds, and so easy. I cut the mushroom and prosciutto in small dice instead of strips; and I substituted shallot rings for the onion. This worked well, except that next time I will be more generous with the shallots since they almost disappear...
