Yes! Try some fresh or dried thyme. It's a bit milder and is great with fresh veggies. I didn't have basil, so I used some fresh thyme from my garden. Yummmm!

Yummm! I figured out how to cut down the sweetness totally by accident. I had bought ketchup at Costco and I didn't realize it was the "simply ketchup" style, which means no sugar added. So the dark brown sugar made it just right. Absolutely delicious!

For those who commented on it being too salty before it's done, the Kosher salt is meant to draw the liquid out of the veggies so they can absorb the flavors of the pickling juices. The easiest mac and cheese recipe ever. I didn't have harissa so just went without. I have used the cream cheese, beer and half and half as a base to make mac and cheese with all kinds of different cheeses. It's a fun and easy way to play with different cheeses. Very good with cheddar and pepper jack too if you like the heat.
