Thanks for the tip-using the petite choppe tomatoes should work just fine. Will also try clamato juice. It's 110 in AZ and need to keep it simple. JRP/AZ

I first had this on Holland American cruise at the Lido-So so happy to have found a comparable recipe. I added feta and few garbanzo beans & bit more EOV oil. Off to Winco for another supply. I do wish the recipes had a calorie/Carb count. I'm really really trying to get gthe weight down. Janet/AZ

I usually make enchiladas suiza all the time - so I gave this a try. I think corn toprtillas absorb more-you can get wonderful canned tomatillas so no peel & cook--buy cooked chicken to shred (rest for meal or sandwiches). Add sauce as you think it will absorb. Good stack recipe. And like other lady said, good with corn chips next day.

very good sauce, would add a few more capers. Blended the sauce to thicken, ours was thin, the Magic Bullet made it very creamy. If you mke it ahead the flavors blend well.
Our son & I made up the dish. It is a little messy, but worth it. Clleaned up as we went along, which helped.
I'm keeping the extra sauce to put over baked...
