I initially thought the same thing but realized the 2 hour prep time includes time to bring unsalted butter to room temp. Good to know about reduced baking time with the mini muffins.

Fool proof, solid recipe. I'm an intermediate cook but don't do as much baking. I only had 2 bananas and my loaf pan was smaller than called for. I haven't had much luck baking in loaf pans (pound cake, pumpkin bread, etc) so I was dubious considering the aforementioned but this turned out perfect! A keeper!

This is my new favorite roast chicken recipe. Before coming across this much touted recipe online, my go to was Ina's Perfect Roast Chicken. I've also tried Rachel's Roast Chicken Dinner with Roasted Garlic Gravy. I prefer this as it's easier, less maintenance, and turns out moist, flavorful meat with lots of sauce. Used TJ's Full Sail Pale Ale IPA and it overwhelmed the soup with beer flavor. I did not have a carrot on hand and used 2% milk but otherwise followed the recipe as is. I did not think it was too cheesy or thick as some reviewers stated. If anything I felt the soup had a slight gritty consistency from the russet potatoes. I probably won't make this...

What a hit--my husband, 7 yo son and I loved this! I did use Ina Garten's recipe for caramelized onions. I also added some dijon mustard and olive oil to the ground beef mixture per Ina's Niman Ranch burger recipe.
