OMG! These are absolutely amazing! Thank you Chef Irvine~! My family loved these! I could not find the double Gloucester cheese so I used Gouda. Well I have to agree with all the people that positively reviewed on this. This by far was the best turkey I ever had! Brine was so simple. The only thing I have to say though(maybe it is my oven) but I did a 16 lb turkey at 325(stuffed) and within 2 hours the top was completely dark browned(not burned but close)! Now it still had 2 hours to go! ...

Well I listened to what ever one said about making extra sauce which I did! I followed the recipe exactly and honestly it was the driest divan I have ever had!!! The flavors were great though. What I did while everyone was making their plates was make up a quick cheese sauce with a roux and some leftover Gruyere Cheese and milk. Definitely helped...
