Reviewed Ciabatta Stuffing with Chestnuts and Pancetta

I made this for Thanksgiving a few years back and my family raved about it. It is now expected that I make this stuffing. I like to only use half of the ciabatta and for the other half I use a multi-grain bread with the seeds in it. Its a great texture change. Also I don't use chestnuts b/c they're a little expensive and I just use plain 'ol bacon....
