"These are very tasty muffins; however, we substituted 1/4 cup dark chocolate morsels for the shredded coconut. Yummy! I prepped all the ingredients and allowed my 3-year old granddaughter to help me. I let her mash the bananas and put the liners in the pan. I also let her help me load the ingredients into the stand up mixer. She was absolutely excited and enjoyed the first muffin out of the oven. Fabulous muffin and a great time!
