You can always leave the foil off. It should get brown anyway, but you can watch it so it doesn't get too brown and then put the foil on if it does!

You can always take the skin off. And you can cover it with foil to insure it doesn't get any more charred.

Remember it has to rest and it will stay warm for a very long time. Just keep that in mind. You can always keep it in the oven covered at a low temp as well.
