Russet potatoes are not a good choice for this recipe. They are not authentic as the russet wasn';t developed until the late 1800';s in Idaho. Plus, they are too dry and grainy. I used traditional red potatoes for this recipe and thus, was able to cut way back on the starch and flour. They turned out perfect and were delicious."

Yuck. If you make this, OMIT the Parmesan cheese. I've made dozens of crab dips, none with Parmesan, and they were all a huge hit, until this recipe. I should have known better, nobody liked it, nor did I or my husband. Seafood is way too delicate for such a strong, overpowering cheese. If you make this, or any seafood, do yourself a favor a...
