One thing I changed: I used cake flour (Softsilk brand instead of the cornstarch-flour mixture. Perhaps this is why my cupcakes did not turn out with a cornbread taste that the other testers used. I did fill in the cupcake liners halfway and baked for about 22 min (and no opening the oven door during baking!. They turned out perfect with carmelization...
