"I'm a big fan of Giada's and even though I gave this a 3 star rating, I still think this is a delicious recipe. The ingredients make this a tasty dish, but my main problem with this was the timing. I baked this for the exact time specified and I inserted my digital thermometer into the thickest part, which registered the degrees Giada said it would. However, when I plated this for my family, it was not done. I had to take it back off the plates and pop it back into the oven. At that point I was disappointed because it was undercooked and because we had to wait for it to cook longer. Next time I think I will either increase the baking time or increase the temperature. I would make this again, it did have great flavor and color. Just make sure it is cooked all the way through when you bake it.

"I've been dying to try this recipe for some time. I read all the other reviews and only tweaked Giada's a little bit. I had 4 chicken breasts (on bone), so I used them all, instead of only 2 like the recipe asked for. I also seasoned the chicken with S&P and the Montreal Steak Seasoning (just because I had it and I liked the way it sounded). I did brown the chicken breasts prior to the veggies, 2 at a time, so I wouldn't crowd the pot. I also added 1 1/2 cloves of minced garlic to the carrot/onion/celery saute. I added the garlic right when the onion turned and only let it cook for a minute before I added the other ingredients. I was skeptical because I had read other reviews about how bland this was. It totally was not bland at all! My husband raved and raved about it! I have made so many of Giada's other recipes and we've never, ever been disappointed! I'm glad I tried this one. I would definitely make it again! It was delicious!
