"This recipe was so good that my husband was dreaming of the leftovers last night. I used pancetta and followed the directions to the letter, something I never do. I have found that Mario's recipes have the perfect ratios and should not be altered, nor the directions, as he has a reason and method for it all. The only way to screw it up is if you don't season it properly, the only thing Mario leaves up to you.
