I have been an athlete my whole life.  I grew up playing soccer with my brothers & best friend then transitioned into running after college.  The best part about being an athlete?  Getting to eat whatever you want, whenever you want!  I loved to bake & cook with my mom growing up & continued to play in the kitchen when I moved out on my own.

Back in Feb 2009 I discovered I had a gluten allergy.  This makes things a little difficult when you're used to living on carbs.  I had to completely change my diet & focus on getting the right nutrients for my active life. 

It has been quite a journey experimenting with foods & spices to adapt to my new allergy, but I can honestly say that I have never felt so healthy or enjoyed food as much as I do now.  It was pretty hard at first, I'm not gonna lie, but once I got things figured out, I have enjoyed cooking & baking more than ever. (My husband even eats the gluten free stuff too - that's how good it is!!!)

My husband I will use recipes as inspiration & then make our own changes & twists based on our tastes.  Then we evaluate each dish & discuss what we liked & didn't like about it.  We tried dozens of combinations of cheeses to create our favorite mac & cheese. I think it took us about 25 times before we got it just right, but that's what's exciting about cooking; you can let an idea inspire you & then play with it until it's the perfect dish for you. 

I love baking, but b/c measurements are so precise, I struggle with it.  I take after my grandmother, who when was asked how much of this do you add, she responded with, "I just dump."  Well, while that was very true, I learned that it's fun to try adding different ingredients to get somewhere new.

The best part of cooking is watching someone else eat it & then tell you how amazing it is.
