My Activity

Reviewed Honey Cornbread Muffins

"These just came out of the oven! I halved the recipe since it's just me and my husband and added a handful of frozen sweet corn kernels. It took less than ten minutes to get these muffins, measured, mixed, and into the oven. I love that! These honey cornbread muffins were just what I was looking for, not too sweet or crumbly, just perfect to with m"

Reviewed Black Bean Hummus

"I love this stuff! Its a totally different take on hummus, its almost like a taco dip. I took some to work and it was completely inhaled by my co-workers in under five minutes! Another thing I really liked about it was that it still tasted great without the tahini, which I hate to buy because of the high price and, and I wouldn't really use it for anything else than hummus. I simply add a few drops of seasame oil. By the way, the oil measurement is waaay off! Try starting with 1/4 to 1/3 cup of olive oil. This hummus also freezes really well."

Reviewed Senate Bean Soup

"I've made this soup twice, the first time with a big 'ol leftover ham bone and it was pretty good, just a bit salty and flat. This time when I made it, i added a few bay leaves and doubled the onion, used two small smoked ham hocks, put a few cups of chicken stock in with the water, some cubed leftover ham and grated carrots at the very end. It was absolutely great this time!"

Reviewed Chocolate-Banana Filled Crepes

"when I mixed these crepes up I used my stick blender and it made the batter wonderfully light and ariy. I used black raspberry jam in them and it was a lovely little afternoon treat. I think these would be great with a bit of freshly whipped cream with a bit of vanilla and some powdered sugar sprinkled on top. I got about 14 crepes from this recipe and used 1 3/4 cups of milk. I also froze a few in between sheets of plastic wrap.

Reviewed English Toffee

" I followed the recipe exactly, aside from cutting it in half. The cooking times were definately a few minutes less than the recipe called for. Since I am stuck using a rather unreliable electric stove, I did what alton brown did on an episode of good eats. I put a cast iron pan on the burner and let it heat up, then put my regular pan down on top of the cast iron pan to insure even heating. This seemed to work nicely. I let it cook up to 305-307 degrees. It came out as I was expecting. I think I may let it get a hair darker next time, but am overall pleased that it came out right!
